I made this recipe today. It's very yummy, healthy (and dairy-free), cheap, and easy. The beans can also be cooked the night before (step 1) , then prepared the next day (step 2). I actually use Better Than Bouillon instead of bouillon cubes.
Refried Beans
Ingredients
1lb dry pinto beans
3 qt water
1 medium onion, chopped
2 tbsp olive oil
1 pork/ham bouillon cube (optional)
1/3 cup very hot water
Salt to taste
Directions
(1) Rinse and sort beans in colander. Pour into large pot; cover with water. Bring to boil, reduce heat and simmer for 2.5-3 hours. Beans are done when soft; skin should be just beginning to break open. Strain and set aside.
(2) Add oil to pot, sauté onions until translucent. Dissolve bouillon cube in hot water. Add beans, and to pot. With potato masher, mash beans to desired texture. Salt to taste. Ready to serve when heated thoroughly.
